GHOSHT KA PULAO (MUTTON PULAO)






First u have to prepare the stock.Take 700 gms mutton and add 1.5 ltrs of water,Salt,black peppercorns,1 onion cut into half, 1 floret of garlic (donot peel just wash and add it).


In a muslin cloth,take 1 tbsp of fennel seeds,1tbsp whole coriander seeds,1/2 tbsp cumin.Tie it up and it it to the mutton.


Add in whole garam masala that is cinnamon stick,2 pcs black cardamom,7 pcs cloves,2 bay leaves.



Cook on medium flame till stock is formed and the meat is tender.It should take approx 25-30 mins.Then separate the meat from the stock using a sieve.



Heat 3 tbsp oil and add 1 small onion sliced and fry it till golden.Then add in the meat and press out the flesh from the garlic floret u had used in making the stock.Fry for 5-7 mins. 



Discard the muslin cloth and add in the stock to the mutton and bring to a boil.



Soak 700 gms rice for 30 mins before cooking.When the mutton mixture comes to a boil,add in the rice and cook till water is 3/4 done.Whisk 3 tbsp of yoghurt and ligthly stir into the rice.Cover and cook on low flame for 10-15 mins till fully done.


Serve with Tomato Chutney :)
