ROYAL DISH OF LAHORE SHALJAM GHOST



SHALJAM GHOST (TURNIP WID MEAT)

This is one of the finest dish of Lahore,Pakistan and it has a sweet tinge to it which makes it even more tasty.But unfortunately its not consumed in many households as they donot know how to enhance its taste.I do know of a secret ingredient which helps to enhance its taste and make it more yummy.I have seen the turnips being made the same way from ages, and I make it in the same way too.And so I will share with this amazing recipe for u all to enjoy them as well.

This recipe is divided into 2 parts.The first part is BHUNA GHOSHT.this in itself is a dish.And the second part is adding the Vegetable to the BHUNA GHOSHT.




 
    



Boil 400-500 gms mutton for few mins.When the color changes to grey,drain the water.(this is good for people suffering from diabetes).Add some water to cook the meat(around 2 glasses),1 whole peeled head of Garlic.























Add 2 medium onions thinly sliced,salt & red chilli powder (as per taste),turmeric powder 1/2 tsp.Pressure cook till the meat is tender and the garlic & onions are soft.
















Now roughly chop 2 small tomatoes and add it to the meat with about 1/2 cup oil (or as per ur requirements).Cook on medium heat till tomatoes have melted and oil has separated.



Part 1 of the recipe is complete.This is also Known as Bhuna Ghosht and u can add some whole coriander seeds,garam masala powder and serve it with roti.If u can want u can add more tomatoes to make more gravy.that is if u want to serve Bhuna Ghosht only.

Now moving towards Part 2 of the recipe,that is adding vegetable to the Bhuna Ghost.Most of the vegetable wid mutton dishes are prepared using the Bhuna ghost.And u can add any vegetable to it.



Cube 750 gms of Turnips add it to the Bhuna Ghost wid 1 small glass of water.Pressure cook for 10 mins so that the turnip is half cooked.






 


Now for the secret ingredient.As the turnip has a sweet tinge to it, so to enhance its flavour Sugar needs to be added.Now to know how much sugar needs to be added depends on how sweet the turnips are.While u r chopping the turnips,u should taste it.If it seems very sweet then add around 1tbsp of sugar.If its not very seet and a bit bitter,then add 2 tbsp of sugar.In my case i added, 2 tbsp sugar.Pressure cook again for 10 mins so as to fully cook the turnips.

After 10 mins,cook on high flame so as to dry the water.And roughly mash some of the turnips with ur cooking spoon(not too much just a bit).Sprinkle some garam masala powder,cover and let cook for 3-5 mins on low flame till oil separates.Throw in some coriander leaves while serving.
Serve with boiled rice.
